Apple Blueberry Compote

Description

This is actually one of my husband’s mad creations. I was quick enough to catch him in the act and write down what he was doing, which is awesome, because the compote is delicious and what’s more fun than eating purple apples? 

Ingredients

2⁄3 c
blueberries
1⁄4 c
blueberries (You will need just under one cup of blueberries total)
1 t
sugar
   
lemon juice
1  
small apple (peeled and chopped)

Instructions

  1. Combine 2/3 cup blueberries, sugar, lemon juice, apple, and about a tbsp of water in a saucepan and bring to a boil. 
  2. Cover and turn heat down to simmer for about 10 minutes. 
  3. Add remaining 1/4 cup of blueberries and let cook on low for another 7 or 8 minutes. 
  4. Serve immediately on pancakes, regular cakes, ice cream or even oatmeal. Enjoy!
